Green Goddess Chicken Salad (Print Version)

# Ingredients:

→ Salad Components

01 - 3 large cooked chicken breasts
02 - 1 cup diced celery
03 - 1/2 cup diced red onion
04 - 3/4 cup sliced almonds

→ Herbs

05 - 1 cup parsley
06 - 1/2 cup dill
07 - 1 small bunch green onions

→ Dressing

08 - 1.5 cups 5% plain Greek yogurt
09 - 1/2 cup mayonnaise
10 - 2 tbsp Dijon mustard
11 - 3 cloves garlic
12 - 2 tbsp lemon juice
13 - 1 tbsp apple cider vinegar
14 - 1 tsp salt
15 - 1/2 tsp pepper

# Instructions:

01 - To finely shred chicken, add to a food processor and pulse for 10 seconds. Alternatively, shred by hand.
02 - Add shredded chicken to a bowl with celery, red onion, and sliced almonds.
03 - In a food processor, add parsley, dill, and green onions. Layer on yogurt, mayonnaise, Dijon mustard, garlic, lemon juice, apple cider vinegar, salt, and pepper. Blend until smooth, scraping down the sides as needed.
04 - Pour the dressing over the chicken mixture and stir until well combined and the chicken is completely coated.
05 - Serve with crackers, on bread, or enjoy as is.

# Notes:

01 - To save time, use pre-cooked rotisserie chicken instead of cooking chicken from scratch.
02 - The dressing can be prepared ahead of time and stored in the refrigerator for up to 3 days.
