Grinch Cookies (Print Version)

# Ingredients:

01 - 15.25 ounces white cake mix (432 grams).
02 - 8 tablespoons unsalted butter, softened.
03 - 2 large eggs, room temperature.
04 - 2 teaspoons peppermint or mint extract.
05 - ½ teaspoon vanilla extract.
06 - Green gel food coloring.
07 - ¼ cup powdered sugar (32 grams).
08 - 3 tablespoons cornstarch.
09 - Red heart-shaped sprinkle or cinnamon.

# Instructions:

01 - Preheat your oven to 375°F (190°C) and prepare a large baking sheet by lining it with parchment paper.
02 - In a large mixing bowl, use a hand-held or stand mixer to combine the cake mix, softened butter, and room-temperature eggs until a smooth batter forms.
03 - Add the peppermint or mint extract and vanilla extract along with enough green gel food coloring to create your desired green hue. Mix these in on a low speed until the color is evenly distributed.
04 - In a separate small bowl, whisk together the powdered sugar and cornstarch until well combined.
05 - Using a 1 1/2 tablespoon cookie scoop, portion out the dough and roll each into the powdered sugar mixture. Ensure each cookie dough ball is fully coated. Place these onto the prepared baking sheet, spacing them about 1 inch apart.
06 - Bake the cookies for 10 to 12 minutes, monitoring them until the edges are set and the tops appear dry.
07 - Remove the cookies from the oven and, while still warm, gently press a red heart-shaped sprinkle onto the center of each cookie.
08 - Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

# Notes:

01 - Store the cookies in an airtight container at room temperature for up to 4 days.
02 - To freeze, allow cookies to cool completely and transfer them to a freezer-safe ziplock bag for up to 2 months.
03 - Heart-shaped sprinkles can be swapped out for cinnamon hearts for added flavor.
