Ground Beef Orzo Delight (Print Version)

# Ingredients:

01 - 1 lb lean ground beef
02 - 1 cup orzo pasta
03 - 1 medium onion, finely chopped
04 - 3 cloves garlic, minced
05 - 1 can (14.5 oz) diced tomatoes with herbs
06 - 2 cups low-sodium beef broth
07 - 2 cups fresh spinach
08 - 1 tsp Italian seasoning (basil, oregano, thyme)

# Instructions:

01 - Chop the onion and mince the garlic.
02 - In a large skillet over medium heat, sauté the onion in olive oil until translucent, about 5 minutes.
03 - Add the ground beef to the skillet and season with salt and pepper. Cook until browned, 6-8 minutes.
04 - Stir in minced garlic and canned tomatoes. Simmer for 2-3 minutes.
05 - Add orzo and beef broth to the skillet. Bring to a boil, then reduce heat to a simmer and cook for 10-12 minutes.
06 - Stir in fresh spinach and Italian seasoning until the spinach wilts, about 1 minute.
