Ground Beef Quesadillas (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 1 pound ground beef.
03 - 1 small onion, finely diced.
04 - 2 cloves garlic, minced.
05 - 1 medium red bell pepper, diced.
06 - 1 small jalapeño, seeded and diced.
07 - 1 teaspoon chili powder.
08 - 1 teaspoon ground cumin.
09 - 1 teaspoon smoked paprika.
10 - 1/2 teaspoon dried oregano.
11 - 1/2 teaspoon salt.
12 - 1/4 teaspoon black pepper.
13 - 2 tablespoons tomato paste.
14 - 1/4 cup beef broth or water.
15 - 8 large flour tortillas.
16 - 3 cups shredded cheese.

# Instructions:

01 - Brown ground beef and onion in oil over medium-high heat.
02 - Cook garlic, peppers 3-4 minutes, add spices and cook 1 minute more.
03 - Add tomato paste and broth, simmer 3-5 minutes until thickened.
04 - Layer cheese and beef mixture on half of each tortilla, fold over.
05 - Cook in skillet 2-3 minutes per side until golden and cheese melts.
06 - Rest 2-3 minutes before cutting, serve with desired toppings.

# Notes:

01 - Can make beef filling ahead.
02 - Cook on medium heat for best results.
03 - Keep warm in 200°F oven between batches.
