Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

Arrange tater tots in a single layer on the sheet and bake for 28–30 minutes until golden brown and crispy.

While the tots are baking, heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it up, until no pink remains.

Stir in taco seasoning and ¼ cup of water. Simmer until the liquid is absorbed.

Once tater tots are baked, remove from oven and top with the cooked ground beef and shredded cheddar cheese.

Return baking sheet to oven for 5 minutes or until the cheese is melted.

Remove from oven and add your desired toppings such as salsa, shredded lettuce, and pickled jalapenos. Serve immediately.
