02 - 400 grams rice noodles or egg noodles

06 - 1 tablespoon freshly grated ginger

# Instructions:

01 - Slice beef into thin strips. Mince garlic, grate ginger, and chop vegetables. Set everything aside for easy access.
02 - Bring a pot of water to a boil and cook noodles according to package instructions. Drain and rinse under cold water to stop cooking, then set aside.
03 - In a small bowl, combine hoisin sauce, soy sauce, minced garlic, and grated ginger. Marinate beef strips in the mixture for at least 15 minutes.
04 - Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Stir-fry bell peppers, carrots, and other chosen vegetables for 3-4 minutes until slightly softened.
05 - Push vegetables to one side of the skillet. Add remaining oil and the marinated beef strips. Stir-fry beef for 5-7 minutes until browned and cooked through.
06 - Add cooked noodles and any remaining marinade to the skillet. Toss everything together until noodles are evenly coated. Stir in green onions and cook for 2 more minutes.
07 - Drizzle sesame oil over noodles (if using) and toss. Garnish with toasted sesame seeds, chopped cilantro, and chili flakes before serving.
