# Ingredients:

01 - 2 1/4 cups all-purpose flour
02 - 1 tablespoon baking powder
03 - 3 tablespoons sugar
04 - 1/2 teaspoon salt
05 - 1 teaspoon cinnamon

→ Wet Ingredients

06 - 2 large eggs, separated
07 - 1/2 cup vegetable oil
08 - 2 cups milk
09 - 1 teaspoon vanilla extract

# Instructions:

01 - Preheat your waffle iron. Spray it with non-stick cooking spray and set aside.
02 - In a large bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.
03 - In a medium bowl, beat the egg whites with a hand mixer until stiff peaks form. Set aside.
04 - In a separate medium bowl, mix together the egg yolks, vegetable oil, milk, and vanilla extract.
05 - Add the egg yolk mixture to the dry ingredients and mix well.
06 - Gently fold the beaten egg whites into the batter. Do not overmix; the batter may remain slightly lumpy.
07 - Pour the batter onto your hot waffle iron and cook according to the manufacturer's directions.
08 - Serve immediately with butter, syrup, powdered sugar, or any other favorite toppings.

# Notes:

01 - Do not overmix the batter. Lumps help maintain the light and fluffy texture of the waffles.
02 - To reheat waffles, place them directly on the oven rack at 120°C for about 10 minutes to restore their crispiness.
