Activate the yeast by mixing warm water, sugar, and yeast in a small bowl. Let it sit for 5-10 minutes until frothy. In a large bowl, whisk together flour and salt. Add olive oil and activated yeast mixture to the dry ingredients. Stir until the dough forms. Knead the dough on a lightly floured surface for 5-7 minutes, or use a stand mixer with a dough hook. Cover the dough with a damp towel and let it rest for 15 minutes.

Preheat the oven to 375°F (190°C). Grease a baking sheet with olive oil or line it with parchment paper. Roll the dough into a 9×13-inch rectangle on a floured surface. Use a pizza cutter or knife to slice the dough into 12 strips.

Arrange the dough strips on the prepared baking sheet. Brush the tops with melted butter and sprinkle with garlic powder if desired. Generously sprinkle mozzarella and parmesan cheese over the dough strips. Add dried oregano or Italian seasoning for extra flavor, if preferred.
