Easy Homemade Cinnamon Bread (Print Version)

# Ingredients:

→ Dough

01 - 1/2 cup (120ml) warm water (110°F/43°C)
02 - 1/2 cup (120ml) warm whole milk (110°F/43°C)
03 - 2 1/4 teaspoons (7g) instant or active dry yeast
04 - 1/4 cup (50g) granulated sugar
05 - 4 tablespoons (56g) unsalted butter, room temperature
06 - 3 cups (390g) bread flour
07 - 1 teaspoon salt

→ Swirl & Topping

08 - 1 egg white, beaten
09 - 1/4 cup (50g) granulated sugar
10 - 2 teaspoons ground cinnamon
11 - 1 tablespoon (14g) unsalted butter, melted

# Instructions:

01 - Mix warm water, milk, yeast, and 2 tablespoons sugar in a stand mixer bowl. Let sit until foamy, 5-10 minutes.
02 - Add remaining sugar, butter, 2 cups flour, and salt. Beat until combined. Add remaining flour and knead for 8-10 minutes until soft and tacky.
03 - Place dough in oiled bowl, cover, and let rise until doubled, about 2 hours.
04 - Roll dough into 8x20 inch rectangle. Brush with egg white, sprinkle with cinnamon-sugar mixture, roll up, and place in 9x5 loaf pan.
05 - Let rise 1 hour. Brush with melted butter and bake at 350°F for 35-45 minutes until golden brown.

01 - Dough can be made ahead and refrigerated overnight for better flavor
02 - Bread can be frozen for up to 3 months
03 - Best to use bread flour for proper structure
