Homemade Shrimp Butter (Print Version)

# Ingredients:

01 - 1 small onion, diced (you'll need 1/2 cup).
02 - 1 1/2 pounds fresh shrimp with shells.
03 - 2 spoons sea salt, plus extra for cooking.
04 - 1 pound soft butter.
05 - 2 lemons (zest and juice).
06 - 1 spoon Worcestershire sauce.
07 - Big handful parsley, chopped fine.
08 - Big handful fresh dill, chopped fine.
09 - Good pinch black pepper.
10 - Pinch celery seeds.

# Instructions:

01 - Chop onion small, put in bowl with ice water. Let it sit 5 minutes to get mild. Drain and pat dry.
02 - Fill one bowl with ice water for the shrimp. Get a pot of water boiling with some salt.
03 - Drop shrimp in boiling water. Cook until they turn pink, about 5-7 minutes. Dunk them in ice water right after.
04 - Peel shells off cooled shrimp. Dry them good with paper towels. Chop them up tiny or buzz in food processor.
05 - Work the butter until smooth in a big bowl. Mix in shrimp, salt, lemon bits, Worcestershire, herbs, and spices.
06 - Mix everything real good. Serve now or put in fridge. If storing, let it warm up 30 minutes before eating.

01 - Keeps fresh in fridge for a week.
02 - Can freeze up to a month.
03 - Shell-on shrimp taste better.
04 - Great on crackers or bread.
