Honey Lime Chicken Avocado Rice (Print)

Citrus-marinated chicken served atop creamy avocado rice creates a perfect balance of sweet, tangy and savory flavors.

# Ingredients:

→ For the Chicken

01 - 4 boneless, skinless chicken breasts
02 - 60 ml honey
03 - 60 ml freshly squeezed lime juice
04 - 30 ml olive oil
05 - 2 cloves garlic, minced
06 - 1 teaspoon chili powder
07 - 1/2 teaspoon cumin
08 - Salt and pepper, to taste

→ For the Avocado Rice

09 - 200 g white or brown rice
10 - 480 ml water or chicken broth
11 - 15 ml olive oil
12 - 1 ripe avocado, diced
13 - 15 g fresh cilantro, chopped
14 - 1/2 teaspoon lime zest
15 - Salt and pepper, to taste

→ For Assembly

16 - 120 ml sour cream (optional)
17 - Lime wedges (optional)

# Directions:

01 - In a small bowl, whisk together honey, lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes or up to 4 hours for more flavor.
02 - Preheat a grill, grill pan, or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, until the internal temperature reaches 75°C (165°F). Once cooked, let the chicken rest for 5 minutes before slicing into strips.
03 - Cook the rice according to package instructions, using water or chicken broth for added flavor. Once cooked, fluff the rice with a fork and stir in olive oil, diced avocado, fresh cilantro, lime zest, and season with salt and pepper to taste.
04 - In serving dishes, layer a portion of the avocado rice at the bottom. Top with sliced honey lime chicken. Drizzle with sour cream if desired, and garnish with extra lime wedges.

# Notes:

01 - For best results, allow the chicken to marinate for the full 4 hours to maximize flavor absorption.
02 - The avocado should be ripe but firm enough to maintain its shape when mixed with the warm rice.
