While chicken bakes, combine honey, hot sauce, butter, and red pepper flakes (if using) in a small saucepan. Heat over medium heat, stirring until butter melts and sauce is smooth. Add vinegar or lemon juice if desired.

Remove chicken from oven and immediately drizzle with hot honey sauce. For more coverage, toss chicken pieces directly in the sauce.
