02 - ¾ cup (180 ml) neutral cooking oil (e.g., avocado, canola, or vegetable)
03 - 1 cup (200 g) light or dark brown sugar, firmly packed
04 - ½ cup (100 g) granulated sugar
05 - 2 large eggs, lightly beaten (room temperature preferred)
06 - 2 cups (479 g) mashed over-ripe bananas (about 4 bananas)
07 - 1 8 oz (226 g) can crushed pineapple, undrained
08 - 1 tablespoon vanilla extract
09 - 3 cups (375 g) all-purpose flour
10 - 1 teaspoon baking soda
11 - 1 teaspoon baking powder
12 - 1 teaspoon ground cinnamon
13 - 1 teaspoon salt
14 - 1 cup (120 g) chopped pecans, toasted

→ Cream Cheese Frosting

15 - ½ cup (113 g) unsalted butter, softened
16 - 8 oz (226 g) brick-style cream cheese, softened (avoid spreadable types)
17 - 1 teaspoon vanilla extract
18 - ¼ teaspoon salt
19 - 4 cups (500 g) powdered sugar

# Instructions:

01 - Preheat oven to 350°F (175°C) and grease and flour two 8-inch or 9-inch round pans. Line bottoms with parchment paper for easier release.
02 - Using a stand or electric mixer, beat butter, oil, and sugars together until creamy and well combined.
03 - Mix in eggs, followed by mashed bananas, crushed pineapple (with juice), and vanilla extract.
04 - In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until evenly combined.
05 - Gradually fold the dry ingredients into the wet mixture using a spatula. Add the toasted chopped pecans halfway through mixing to avoid overmixing.
06 - Divide the batter evenly between prepared pans and bake for 34–39 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
07 - Allow cakes to cool for 10 minutes in the pans. Run a knife along the edges, invert onto a rack, and let them cool completely.
08 - Beat butter and cream cheese together until smooth. Mix in vanilla extract and salt, then gradually add powdered sugar on low speed until fully combined.
09 - Level cake layers if needed. Frost the top of one layer, add the second cake layer, and frost the top and sides. Serve or store as needed.

# Notes:

01 - For best flavor, toast pecans at 350°F (175°C) for 5 minutes before chopping. Let cool before using.
