Preheat oven to 375ºC. In a large nonstick skillet over medium heat, cook bacon until crispy, about 8 minutes. Drain on a paper towel-lined plate, then chop.

Spoon about 1 tablespoon of Parmesan cheese into a small mound on a large baking sheet. Top with about 1 tablespoon of cheddar cheese and carefully pat down the cheeses. Add a jalapeño slice on top, sprinkle with chopped bacon, and season with freshly ground black pepper. Repeat with the remaining ingredients.

Bake until the crisps are golden and crispy, about 12 minutes.
