Cut the jalapenos in half lengthwise and remove the seeds and membranes using gloves. Stuff each half with cream cheese and place them on a cookie sheet. Bake at 375°F (190°C) until the jalapenos are semi-soft, the cheese is bubbly, and slightly browned, about 15-20 minutes.

Lay out the bread slices. Place one slice of cheddar cheese on two slices of bread and one slice of Monterey Jack cheese on the other two. Slice the cooked jalapenos into bite-sized pieces and divide between the bread slices with cheddar. Place the bacon slices on the ones with Monterey Jack. Sprinkle chopped cilantro on one side, if desired, and combine to make two sandwiches.

Spread butter evenly on the outside of each sandwich. Place sandwiches in a skillet over medium-low heat, butter-side down. Add more butter on top as needed. Grill each side until golden brown and the cheese is melted, about 3-4 minutes per side.
