Jamaican Shrimp Rasta Pasta (Print Version)

# Ingredients:

→ Base

01 - 12 oz penne pasta
02 - 1 pound shrimp, peeled and deveined
03 - 2 tablespoons jerk seasoning, divided
04 - 2 tablespoons olive oil

→ Vegetables

05 - 1 red bell pepper, sliced
06 - 1 green bell pepper, sliced
07 - 1 yellow bell pepper, sliced
08 - 3 cloves garlic, minced
09 - 2 green onions, sliced

→ Sauce

10 - 1 cup heavy cream
11 - ½ cup chicken or vegetable broth
12 - 1 cup grated Parmesan cheese
13 - salt and black pepper to taste
14 - fresh parsley or cilantro for garnish

# Instructions:

01 - Cook penne in salted water according to package directions until al dente. Drain and set aside.
02 - Toss shrimp with 1 tablespoon jerk seasoning. Sauté in oil 2-3 minutes per side until pink. Remove from pan.
03 - In same pan, sauté bell peppers until tender. Add garlic and cook 1 minute more.
04 - Add broth to deglaze pan. Stir in cream, remaining jerk seasoning, and Parmesan until smooth.
05 - Toss pasta with sauce, add shrimp. Garnish with green onions and herbs.

# Notes:

01 - Can adjust jerk seasoning to taste
02 - Use any color bell peppers
03 - Can substitute chicken broth with vegetable broth
