Key Lime Fudge (Print Version)

# Ingredients:

01 - 5 oz can 2% evaporated milk.
02 - 1 2/3 cups granulated sugar.
03 - 1/2 teaspoon salt.
04 - 12 large marshmallows, quartered.
05 - 2 cups white chocolate chips.
06 - 1/4 cup grated lime zest (about 5 limes).
07 - 2 tablespoons key lime juice (5-7 limes).

# Instructions:

01 - Line 8-inch square pan with foil and grease with butter.
02 - Combine milk, sugar and salt in heavy saucepan. Bring to boil over medium heat.
03 - Reduce to medium-low and boil 5-6 minutes, stirring constantly.
04 - Remove from heat. Stir in marshmallows, chocolate, zest and juice until melted and smooth.
05 - Pour into pan, spread evenly. Cool completely.
06 - Cut into 1-inch squares.

# Notes:

01 - Can use regular limes instead of key limes.
02 - 8-inch pan works better than 9-inch.
03 - Double boiler optional but helpful.
