Slice the smoked sausage or kielbasa into bite-sized pieces about 1½ inches thick. Ensure the pieces are uniform for even cooking.

Cut each bacon slice in half. Wrap one piece of bacon around each sausage slice, overlapping slightly. Secure with a toothpick to create the signature kilted look.

Place the wrapped sausage bites seam side down on a wire rack set over a baking sheet. This allows fat to drip away and helps the bacon cook evenly.

Sprinkle brown sugar generously over each bite or drizzle with honey or maple syrup. Optionally add black pepper or chili flakes for added flavor.
