In a medium bowl, whisk together soy sauce, honey, minced garlic, grated ginger, sesame oil, and sweet chili sauce until well combined.

Pour half of the marinade over the pork chops in a shallow dish. Allow to marinate for 10 minutes. Reserve the remaining marinade for cooking.

Heat olive oil in a large skillet over medium-high heat until shimmering.

Add pork chops to the skillet, discarding the used marinade. Cook until browned on one side, approximately 6 minutes.

Turn the chops over and add the reserved fresh marinade to the pan. Cook for an additional 6 minutes, or until the pork reaches an internal temperature of 71°C (160°F).

Remove from heat and allow to rest for 3-5 minutes before serving to allow juices to redistribute.
