La Scala Salad Recipe (Print Version)

# Ingredients:

01 - 1/3 cup extra virgin olive oil.
02 - 3 tablespoons red wine vinegar.
03 - 2 cloves garlic, minced.
04 - 3 teaspoons Dijon mustard.
05 - 1/2 teaspoon each salt and pepper.
06 - 1/3 cup grated Pecorino Romano.
07 - 1 head iceberg lettuce, shredded.
08 - 1 head romaine lettuce, shredded.
09 - 15 oz can chickpeas, drained.
10 - 4 oz Italian salami, sliced.
11 - 2 cups shredded mozzarella.

# Instructions:

01 - Combine all dressing ingredients in bowl or jar and whisk or shake.
02 - Shred both types of lettuce into small pieces.
03 - Add shredded lettuce to large bowl.
04 - Add drained chickpeas to lettuce.
05 - Add sliced salami and shredded mozzarella.
06 - Pour dressing over salad ingredients.
07 - Toss everything together until well coated.
08 - Serve immediately for best texture.
