Lime Sweet Potato Black Bean (Print)

Savory patties combining roasted black beans, sweet potatoes and vegetables with a tangy lime drizzle for a delicious plant-based meal.

# Ingredients:

→ Patties

01 - 2 cans (15 oz each) black beans, drained and rinsed
02 - 1 medium sweet potato (350g), cut into 1/2-inch cubes
03 - 3/4 cup old-fashioned rolled oats
04 - 1/2 medium yellow onion, diced
05 - 1/2 medium red bell pepper, diced
06 - 4 cloves garlic, minced
07 - 2 tsp smoked paprika
08 - 1/2 tsp ground coriander
09 - 1/2 tsp fennel seeds
10 - 1/4 tsp ground cumin
11 - 1/2 vegan beef bouillon cube or 1/2 tsp vegetable base
12 - 1 tbsp tamari
13 - Kosher salt, to taste
14 - Cooking oil spray

→ Lime Drench

15 - 2 tbsp avocado oil
16 - Juice of 1 small lime
17 - 1-2 tbsp agave syrup

# Directions:

01 - Preheat the oven to 220°C (425°F). Line two baking trays with parchment paper. Drain black beans thoroughly and spread in a single layer on one baking tray.
02 - Arrange sweet potato cubes on one side of the second tray, with diced onions, bell pepper, and garlic on the other side. Drizzle with oil, sprinkle with salt, and toss to coat. Spread in a single layer.
03 - Place beans on the top rack and vegetables on the bottom rack of the oven. Bake beans for 15 minutes and vegetables for 15-20 minutes until potatoes are fork-tender. Allow to cool for 10 minutes after removing from oven.
04 - Transfer beans and roasted vegetables to a food processor. Add oats, paprika, coriander, fennel seeds, cumin, crumbled bouillon cube, and tamari. Pulse until well combined, scraping down sides as needed.
05 - Scoop 1/3 cup portions of the mixture and shape into round patties approximately 1/2 inch thick. Place on a lined baking tray and lightly spray both sides with oil.
06 - Bake patties for 15 minutes at 220°C (425°F).
07 - While patties bake, whisk together avocado oil, lime juice, agave syrup, and a pinch of salt in a small bowl.
08 - Brush tops of patties with lime drench, flip, and repeat on the other side. Return to oven for an additional 5-10 minutes until golden brown.
09 - Allow patties to cool and firm up for 10 minutes. Brush with additional lime drench before serving if desired.

01 - These patties can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month.
02 - For a firmer texture, refrigerate the mixture for 30 minutes before forming patties.
