Limoncini with Ricotta and Lemon (Print Version)

# Ingredients:

01 - 250 grams cow's ricotta
02 - 120 grams Pavesini biscuits
03 - 50 grams stevia sweetener or 100 grams sugar
04 - 2 lemons (juice and grated zest)
05 - 1/2 vial vanilla essence
06 - A few drops yellow food coloring (optional)
07 - Icing sugar, as needed

# Instructions:

01 - Sift the ricotta into a bowl and mix until creamy. Add the stevia sweetener or sugar and incorporate thoroughly.
02 - Stir in the vanilla essence, lemon juice, and grated lemon zest. If desired, add yellow food coloring and mix well.
03 - Blend the Pavesini biscuits into crumbs and mix them into the ricotta mixture until fully incorporated. Cover with plastic wrap and refrigerate for 30 minutes.
04 - Remove the mixture from the refrigerator. Wet your hands slightly and form small balls from the mixture.
05 - Roll the balls in icing sugar. Place them on a tray or plate. Serve immediately or refrigerate for an additional hour for firmer texture.

01 - You can customize the flavor by replacing lemon juice and zest with orange or another fruit of your choice.
