Loaded Chicken Cajun Sausage Pasta (Print Version)

01 - 2 tablespoons olive oil
02 - 1 pound boneless, skinless chicken breasts, diced
03 - 12 oz smoked Cajun sausage, sliced
04 - 1 tablespoon Cajun seasoning
05 - 1 yellow onion, chopped
06 - 1 red bell pepper, chopped
07 - 3 cloves garlic, minced
08 - 10 oz penne pasta
09 - 2 cups chicken broth
10 - 1 ½ cups heavy cream
11 - 1 (10 oz) can diced tomatoes with green chilies
12 - 1 cup shredded mozzarella cheese
13 - 1 cup shredded sharp cheddar cheese
14 - Salt and pepper to taste

15 - Fresh parsley, chopped

# Instructions:

01 - Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch casserole dish.
02 - Cook pasta according to package directions until al dente. Drain and set aside.
03 - Heat olive oil in a large skillet over medium heat. Add chicken, season with Cajun seasoning, and sauté until browned and cooked through. Remove and set aside.
04 - In the same skillet, add sausage slices and cook until browned. Remove and set aside with chicken.
05 - Add chopped onion and bell pepper to the skillet, sauté for 3-4 minutes, then stir in garlic and cook for 1 minute.
06 - Pour in chicken broth, heavy cream, and diced tomatoes with chilies. Bring to a simmer.
07 - Add cooked pasta, chicken, and sausage back into the skillet. Stir in mozzarella and cheddar cheese. Adjust seasoning with salt and pepper.
08 - Transfer mixture to the prepared baking dish. Bake uncovered for 15-20 minutes or until bubbly and slightly golden on top.
09 - Garnish with fresh parsley before serving.
