Low Carb Chicken Divan (Print)

01 - 2 boneless skinless chicken breasts, cooked and chopped
02 - 1 tbsp unsalted butter
03 - 1 yellow onion, chopped
04 - ½ tbsp garlic, minced
05 - ½ tsp garlic salt
06 - 1 cup chicken broth
07 - 3 cups cauliflower rice
08 - 1 cup heavy cream
09 - 1 tsp lemon juice
10 - ½ cup mayonnaise
11 - 3 cups broccoli, steamed
12 - 2 cups cheddar cheese, shredded
13 - 1 tsp fresh parsley, chopped (optional, for garnish)

# Directions:

01 - Preheat oven to 350°F.
02 - In a large skillet, melt butter over medium heat. Add onions and garlic and cook until onion is softened. Stir in garlic salt.
03 - Add cauliflower rice to the skillet and cook until softened. Stir in chicken broth and cook covered for 10 minutes.
04 - Stir in heavy cream and lemon juice. Reduce heat to medium-low, simmer for 10 minutes, then stir in mayonnaise. Remove from heat.
05 - Add half of the chicken into the cauliflower mixture. Spread the other half of the chicken on the bottom of an 8×8 casserole dish. Add broccoli and top with the cauliflower mixture. Cover with cheddar cheese.
06 - Cover the casserole and bake for 30 minutes. Remove cover and bake for an additional 10 minutes.
07 - Serve hot and sprinkle with parsley if desired.
