Marry Me Chicken Soup (Print Version)

# Ingredients:

01 - 1 teaspoon olive oil.
02 - 1½ pounds chicken breasts or thighs, cut in 1-inch pieces.
03 - 2 teaspoons Italian seasoning.
04 - Salt and pepper to taste.
05 - ½ cup diced carrots.
06 - ½ cup diced celery.
07 - ½ cup diced onions.
08 - ¼ cup sundried tomatoes, diced.
09 - 3 garlic cloves, minced.
10 - ¼ cup flour.
11 - 2 tablespoons tomato paste (optional).
12 - 6-8 cups chicken broth.
13 - 6 ounces small pasta shells.
14 - 1 cup heavy cream.
15 - 1 cup grated parmesan cheese.
16 - 3 cups fresh spinach.

# Instructions:

01 - Heat oil in pot over medium-high. Add chicken, season with Italian seasoning, salt and pepper. Cook until brown, about 5 minutes.
02 - Add onions, carrots, celery, tomatoes, and garlic. Cook until soft, about 4 minutes.
03 - Sprinkle in flour, stir well. Add tomato paste if using. Pour in broth slowly, stirring to avoid lumps.
04 - Bring to boil, add pasta and seasonings. Cover, simmer 20 minutes until chicken is done and pasta tender.
05 - Stir in cream, spinach, and cheese. Simmer 5 more minutes. Taste and adjust seasoning.

# Notes:

01 - Start with less broth, can add more later.
02 - Can use rotisserie chicken.
03 - Pasta can be cooked separately.
04 - Can be made in slow cooker.
