07 - 2 (8-ounce) boneless, skinless white fish filets, halved crosswise

09 - 4 potato buns, lightly toasted
10 - 4 slices American cheese
11 - Store-bought or homemade tartar sauce, for serving

# Directions:

01 - In a shallow bowl, whisk together the eggs, flour, mustard, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
02 - Place panko breadcrumbs in a separate shallow bowl. Season the fish filets on all sides with salt and pepper.
03 - In a large heavy skillet, pour oil to a depth of 1/4 inch and heat over medium heat until shimmering.
04 - Dip each piece of fish into the egg mixture, then coat with panko, gently pressing to adhere the breadcrumbs.
05 - Fry the fish, turning halfway through, until golden brown and just cooked through, 2 to 3 minutes per side. Transfer to a paper towel-lined plate and season with salt.
06 - Layer a slice of American cheese on the bottom bun, top with the fried fish, and spread tartar sauce on top of the fish. Close the sandwiches and serve with extra tartar sauce on the side.
