Preheat the oven to 375°F.

In a medium bowl, combine ground beef, egg, mustard, BBQ sauce, garlic powder, black pepper, and minced onion. Mix until well combined.

Add the bread crumbs and mix again until the mixture holds together.

Shape the mixture into an oval loaf and place it in a 4×8 baking pan.

Spread a little additional BBQ sauce over the top of the loaf.

Cover the pan with foil and bake for about 45 minutes or until the meatloaf is fully cooked.

Remove the meatloaf from the oven and allow it to rest for about 20 minutes. Slice into pieces about 3/4 inch thick.

Butter one side of each slice of bread.

Place one slice of bread buttered side down in a heated skillet. Add one slice of pepper jack cheese, place slices of meatloaf on top, then add another slice of cheese. Top with the second slice of bread, buttered side up.

Cook until the bottom bread becomes golden and crispy. Flip carefully and cook the other side until golden brown and the cheese is melted.

Remove from the pan, slice, and serve warm.
