Mediterranean Beef Bowls (Print)

Flavorful ground beef and chickpeas served over jasmine rice with fresh vegetables, hummus, and Mediterranean garnishes.

# Ingredients:

→ Proteins & Legumes

01 - 450g lean ground beef
02 - 1 can (425g) chickpeas, drained and rinsed
03 - 1 cup creamy hummus
04 - ¼ cup crumbled feta cheese

→ Grains

05 - 1 cup jasmine rice, thoroughly rinsed

→ Vegetables

06 - 2 small cucumbers, thinly sliced
07 - 1 cup halved grape tomatoes
08 - Pickled red onions

→ Herbs & Seasonings

09 - 1 teaspoon garlic powder
10 - 1 teaspoon dried oregano
11 - ¼ teaspoon dried dill weed
12 - 1 teaspoon smoked paprika
13 - Kosher salt and freshly ground black pepper
14 - 1 tablespoon lemon zest
15 - Chopped fresh parsley and chives, for garnish

→ Liquids

16 - 2 teaspoons extra virgin olive oil
17 - 1 ½ cups chicken broth or bone broth

# Directions:

01 - Rinse jasmine rice under cold water until water runs clear. In a medium pot, combine rice with chicken broth and bring to a vigorous boil. Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and set aside.
02 - Heat olive oil in a large skillet over medium heat. Add ground beef and break into smaller pieces with a spatula. Cook until browned, approximately 5-7 minutes. Season with garlic powder, oregano, dill, smoked paprika, salt, and pepper, stirring well to incorporate.
03 - Add drained chickpeas to the cooked beef. Stir to combine and heat through for about 3 minutes, allowing flavors to meld together.
04 - While beef mixture cooks, slice cucumbers thinly and halve grape tomatoes. Set aside for assembly.
05 - In each serving bowl, place a base of jasmine rice. Top with beef and chickpea mixture. Arrange cucumber slices and tomatoes on the side. Add a generous dollop of hummus, sprinkle with crumbled feta, lemon zest, fresh herbs, and pickled red onions.
