01 - 450g ground chicken (mix of lean and fatty parts)
02 - 1 small red onion, finely chopped
03 - 2 cloves garlic, minced
04 - 60g fresh parsley, chopped
05 - 2 tablespoons fresh mint, chopped
06 - 1 teaspoon dried oregano
07 - Zest of 1 lemon
08 - 1 egg, lightly beaten
09 - 60g breadcrumbs (panko or regular)
10 - 60g crumbled feta cheese (optional)
11 - Salt and freshly ground black pepper to taste
12 - Olive oil for cooking

# Directions:

01 - In a large bowl, combine ground chicken, chopped red onion, minced garlic, parsley, mint, and dried oregano. Add lemon zest, beaten egg, breadcrumbs, and crumbled feta cheese if using. Season with salt and pepper. Mix thoroughly until all ingredients are well incorporated, but avoid overmixing to maintain tenderness.
02 - Divide the mixture into 6-8 equal portions. Shape each portion into a patty approximately 1.3cm thick and arrange on a plate.
03 - Heat olive oil in a large skillet over medium-high heat. Add chicken patties and cook for 4-5 minutes per side until golden brown and internal temperature reaches 74°C. Work in batches if necessary to avoid overcrowding.
04 - Transfer the cooked patties to a serving platter. Serve warm with tzatziki, Greek yogurt sauce, or alongside a crisp salad and warm pita bread for an authentic Mediterranean meal.

01 - For juicier patties, allow the mixture to rest in the refrigerator for 30 minutes before cooking.
