Mediterranean Chicken Patties (Print)

Tender chicken patties infused with Mediterranean herbs, spinach and spices – perfect for sandwiches, salads or appetizers.

# Ingredients:

→ Base Ingredients

01 - 1 lb. ground chicken
02 - 1 medium onion, diced
03 - 1 tablespoon garlic, minced
04 - 1 cup baby spinach, chopped

→ Binding and Flavoring

05 - 1/2 cup breadcrumbs
06 - 1/4 cup Greek yogurt
07 - 2 tablespoons fresh dill, finely chopped
08 - 1 tablespoon fresh lemon juice
09 - 1 teaspoon dried oregano
10 - 1/2 teaspoon paprika
11 - 1/2 teaspoon ground cumin
12 - 1/2 teaspoon salt
13 - 1/4 teaspoon ground black pepper

→ Cooking

14 - 3 tablespoons olive oil

# Directions:

01 - Sauté onion in 1 tablespoon of olive oil over medium heat until translucent, about 5 minutes. Add garlic and cook for another 30 seconds. Remove from heat.
02 - In a large bowl, combine the sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until thoroughly incorporated.
03 - Shape the mixture into approximately eight patties, each about ½ inch thick.
04 - Heat the remaining olive oil in a skillet over medium heat. Cook patties for 5-6 minutes on each side until golden brown and cooked through to an internal temperature of 165°F (74°C).
05 - Drain patties on paper towels to remove excess oil and serve warm with desired accompaniments.

# Notes:

01 - These patties can be served in pita bread, over salad, or as an appetizer with tzatziki sauce.
02 - For meal prep, cook and refrigerate patties for up to 3 days or freeze for up to 1 month.
