Mediterranean Spinach Feta Quesadillas (Print)

Crispy tortillas stuffed with spinach, feta, mozzarella and tomatoes for a Mediterranean-inspired quick meal.

# Ingredients:

→ Base

01 - 4 flour tortillas
02 - 1 tablespoon olive oil (for cooking)

→ Fillings

03 - 1 cup fresh spinach, chopped
04 - 1/2 cup shredded mozzarella cheese
05 - 1/2 cup crumbled feta cheese
06 - 1 small tomato, diced
07 - 1/4 cup red onion, thinly sliced
08 - 1/4 teaspoon black pepper

# Directions:

01 - In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper. Stir until thoroughly mixed.
02 - Lay one tortilla flat and place one-fourth of the filling mixture onto half of the tortilla. Fold the tortilla over to cover the filling.
03 - Heat a large skillet over medium heat. Add olive oil and when hot, place the filled tortilla in the pan. Cook for 3-4 minutes per side, pressing gently with a spatula to ensure even melting and browning.
04 - Remove from heat, let cool slightly, then slice into wedges and serve.

# Notes:

01 - For extra flavor, add a sprinkle of dried oregano or fresh basil to the filling.
