Mediterranean Steak Bowl (Print)

Tender marinated steak with tzatziki, fresh vegetables, and Mediterranean flavors in a customizable grain bowl.

# Ingredients:

→ For the Steak and Marinade

01 - 1 lb sirloin steak, about 1-inch thick
02 - 3 tablespoons olive oil
03 - 2 garlic cloves, minced
04 - 1 tablespoon fresh lemon juice
05 - 1 teaspoon dried oregano
06 - 1 teaspoon dried thyme
07 - ½ teaspoon salt
08 - ¼ teaspoon black pepper

→ For the Bowl Base

09 - 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
10 - 1 cup roasted chickpeas

→ For the Toppings

11 - 1 cup cherry tomatoes, halved
12 - 1 cucumber, diced
13 - ½ red onion, thinly sliced
14 - ½ cup kalamata olives, pitted
15 - ⅓ cup feta cheese, crumbled
16 - ¼ cup fresh herbs (parsley or dill), chopped

→ For the Tzatziki

17 - 1 cup plain Greek yogurt
18 - ½ cucumber, grated and squeezed dry
19 - 1 tablespoon fresh lemon juice
20 - 1 garlic clove, minced
21 - 1 tablespoon fresh dill, chopped
22 - Salt and pepper to taste

→ For the Lemon Vinaigrette

23 - 3 tablespoons olive oil
24 - 2 tablespoons fresh lemon juice
25 - 1 teaspoon honey
26 - 1 garlic clove, minced
27 - ½ teaspoon dried oregano
28 - Salt and pepper to taste

# Directions:

01 - Combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper in a bowl. Coat the sirloin steak thoroughly and marinate for 30 minutes to 4 hours in the refrigerator.
02 - Mix Greek yogurt, grated and squeezed cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper in a bowl. Refrigerate until ready to serve.
03 - Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper until well combined.
04 - Heat a skillet over high heat. Sear the marinated steak for 4-5 minutes per side for medium-rare. Let rest for 5-10 minutes before slicing thinly against the grain.
05 - Layer the base of cooked grains, arrange sliced steak and all toppings in sections. Serve with tzatziki sauce and lemon vinaigrette drizzled on top or on the side.

01 - The chickpeas can be omitted for paleo or keto diets.
02 - For dairy-free option, use coconut yogurt instead of Greek yogurt and omit the feta cheese.
03 - For Whole30 compliance, omit the honey in the vinaigrette.
