Mediterranean Tzatziki Chicken Salad (Print)

Creamy Mediterranean chicken with Greek yogurt, cucumber, fresh herbs and lemon for a light and flavorful meal.

# Ingredients:

→ Protein

01 - 2 cups cooked chicken breast, shredded

→ Sauce Base

02 - 1 cup plain Greek yogurt
03 - 1 medium cucumber, finely grated and drained
04 - 2 tablespoons fresh dill, chopped
05 - 1 tablespoon fresh parsley, chopped
06 - 2 tablespoons lemon juice
07 - 2 cloves garlic, minced

→ Aromatics

08 - 1/4 cup red onion, finely diced
09 - Salt and freshly ground black pepper to taste

# Directions:

01 - In a large mixing bowl, combine the Greek yogurt, grated cucumber, dill, parsley, lemon juice, and minced garlic. Stir until well blended.
02 - Add the shredded chicken and diced red onion to the yogurt mixture. Mix thoroughly until the chicken is evenly coated.
03 - Season with salt and freshly ground black pepper to taste.
04 - Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
05 - Serve the tzatziki chicken salad over a bed of mixed greens, in a pita pocket, or with whole-grain crackers.

# Notes:

01 - For best results, squeeze excess moisture from the grated cucumber using a clean kitchen towel before adding to the yogurt.
02 - This salad keeps well in the refrigerator for up to 2 days.
