Mexican Wedding Cookies (Print Version)

# Ingredients:

01 - 1 cup butter, softened
02 - ½ cup powdered sugar, plus more for rolling
03 - 1 teaspoon vanilla extract
04 - 2¼ cups all-purpose flour
05 - ½ teaspoon kosher salt
06 - ¾ cup finely chopped pecans or walnuts

# Instructions:

01 - Preheat oven to 400°F.
02 - Cream together butter, sugar, and vanilla. Slowly add flour and salt, mixing until just combined. Stir in nuts.
03 - Scoop into 1-inch balls and round between hands.
04 - Bake 10-12 minutes until set but not browned.
05 - Cool cookies on tray 1-2 minutes, then roll warm cookies in powdered sugar.
06 - Once fully cooled, roll cookies in powdered sugar again.
