Mini Baileys Cheesecakes (Print Version)

# Ingredients:

→ Crust

01 - 12 chocolate sandwich cookies, crushed
02 - 2 tablespoons butter, melted
03 - Pinch of coarse salt

→ Cheesecake Filling

04 - 12 ounces cream cheese, softened
05 - 2 large eggs
06 - 1/3 cup white sugar
07 - 1/4 cup irish cream liqueur
08 - 1/4 cup sour cream
09 - 1 1/2 tablespoons all-purpose flour
10 - 1/2 teaspoon vanilla essence
11 - Pinch of coarse salt
12 - 1/2 cup mini chocolate chips

→ Toppings

13 - Whipped cream
14 - Chocolate sauce for drizzling
15 - Mini chocolate chips for garnish

# Instructions:

01 - Preheat oven to 325ºF. Line 12-cup muffin tin with paper liners and spray with cooking spray.
02 - Mix crushed cookies with melted butter and salt until combined. Press mixture firmly into lined muffin cups.
03 - Beat cream cheese until fluffy. Add eggs and sugar, then mix in Baileys, sour cream, 1 tablespoon flour, vanilla, and salt until smooth.
04 - Toss chocolate chips with remaining flour, then fold into batter. Divide mixture evenly among crusts.
05 - Bake for 20 minutes until centers are almost set. Cool 30 minutes at room temperature, then chill 2 hours.
06 - Top with whipped cream, chocolate drizzle, and mini chocolate chips before serving.
