Mini Crème Brûlée Cheesecakes (Print Version)

# Ingredients:

01 - 1 cup graham cracker crumbs.
02 - 3 tablespoons melted butter.
03 - 2 tablespoons granulated sugar for crust.
04 - 16 ounces cream cheese, softened.
05 - 1/2 cup granulated sugar for filling.
06 - 2 large eggs.
07 - 1 teaspoon vanilla extract.
08 - 1/4 cup heavy cream.
09 - 1/4 cup granulated sugar for topping.

# Instructions:

01 - Heat oven to 325°F. Line muffin tin with paper liners.
02 - Mix graham crumbs, melted butter, and sugar. Press into liners. Bake 5 minutes.
03 - Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and cream.
04 - Pour filling into crusts. Bake 18-20 minutes until set but slightly jiggly.
05 - Cool to room temperature, then chill 2 hours. Top with sugar and torch until caramelized.

01 - Can use gluten-free graham crackers.
02 - Torch topping just before serving.
