Mom's Turkey Soup (Print Version)

# Ingredients:

01 - 1 turkey carcass with drippings.
02 - 1 large yellow onion, quartered.
03 - 1-2 carrots, roughly chopped.
04 - 1 celery rib with tops.
05 - Fresh parsley sprigs.
06 - 1-2 sprigs fresh thyme or 1 teaspoon dried.
07 - 1 bay leaf.
08 - 5-10 peppercorns.
09 - 1-2 tablespoons butter.
10 - 1-1.5 cups chopped carrots.
11 - 1-1.5 cups chopped onion.
12 - 1-1.5 cups chopped celery.
13 - 2 cloves minced garlic.
14 - 2-4 tablespoons chopped parsley.
15 - 2 teaspoons poultry seasoning.
16 - 4-8 ounces egg noodles (optional).
17 - 2-4 cups chopped cooked turkey meat.

# Instructions:

01 - Cover turkey carcass and vegetables with water, simmer 4 hours, strain.
02 - Cook carrots, onions, celery in butter until soft, about 10 minutes.
03 - Pour in strained stock, add seasonings, simmer until vegetables are tender.
04 - Add noodles if using, cook 4 minutes until al dente.
05 - Add shredded turkey meat, cook 1 minute to heat through.

# Notes:

01 - Can skip noodles for gluten-free version.
02 - Stock can be reduced for storage.
03 - Amounts can be adjusted based on ingredients available.
