No Bake Energy Bites (Print Version)

# Ingredients:

01 - 1 cup old-fashioned oats.
02 - 2/3 cup toasted shredded coconut (sweetened or unsweetened).
03 - 1/2 cup creamy peanut butter.
04 - 1/2 cup ground flaxseed.
05 - 1/2 cup semisweet chocolate chips (or vegan chocolate chips).
06 - 1/3 cup honey.
07 - 1 tablespoon chia seeds (optional).
08 - 1 teaspoon vanilla extract.

# Instructions:

01 - Stir all ingredients together in a large mixing bowl until thoroughly combined.
02 - Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled.
03 - Roll into mixture into 1-inch balls.
04 - Then enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.

# Notes:

01 - Can speed up chilling by spreading mixture on baking sheet and freezing for 20-30 minutes.
