In a food processor, blend the Oreo cookies into fine crumbs. Transfer the crumbs to a mixing bowl.

Add the softened cream cheese to the Oreo crumbs. Mix well until fully combined and the mixture is smooth.

Incorporate green food coloring into the mixture. Adjust the amount to achieve your desired shade of green.

Using your hands, scoop out small portions of the mixture, about one tablespoon each, and roll them into balls. Place them on a baking sheet lined with parchment paper.

Place the baking sheet in the refrigerator for about 30-45 minutes to let the truffles firm up.

In a microwave-safe bowl, melt the white chocolate chips in increments of 30 seconds, stirring in between, until smooth.

Once the truffles are firm, dip each one into the melted white chocolate. Gently shake off any excess chocolate.

Immediately sprinkle red sprinkles or your desired decoration on top before the chocolate sets.
