→ Crust

01 - 1 ½ cups graham cracker crumbs
02 - ½ cup unsalted butter, melted

→ Filling

03 - 2 cups cream cheese, softened
04 - 1 cup powdered sugar
05 - 1 cup heavy whipping cream
06 - 1 cup fresh orange juice
07 - Zest of 1 orange
08 - 1 teaspoon vanilla extract
09 - 1 envelope (about 2 tablespoons) unflavored gelatin
10 - 2 tablespoons cold water

→ Garnish

11 - Additional orange slices or zest (optional)

# Instructions:

01 - In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until thoroughly combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
02 - In a large bowl, beat the softened cream cheese until smooth and creamy.
03 - Gradually add the powdered sugar to the cream cheese, mixing until well combined.
04 - Add the heavy whipping cream, fresh orange juice, orange zest, and vanilla extract. Beat on medium-high speed until the mixture is light and fluffy.
05 - In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom. Then, gently heat it in the microwave for about 10 seconds until dissolved.
06 - Slowly pour the gelatin mixture into the cheesecake mixture, stirring until well incorporated.
07 - Carefully pour the cheesecake filling over the crust in the springform pan. Spread it evenly with a spatula.
08 - Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight to set.
09 - Once set, carefully remove the sides from the springform pan.
10 - Top with additional orange slices or zest for a decorative touch before serving.

# Notes:

01 - Ensure the cheesecake is chilled thoroughly for the best texture.
02 - Use freshly squeezed orange juice for maximum flavor.
