Preheat oven to 375°F (190°C). Generously grease a muffin tin as the puffs will expand significantly.

In a saucepan over medium heat, melt the butter in the milk and bring just to a boil. Remove from heat.

Quickly stir in the flour and a pinch of salt until the mixture forms a smooth dough that pulls away from the sides of the pan.

Let the mixture cool for 5 minutes. Then beat in the eggs one at a time, mixing thoroughly after each addition until smooth and glossy. Use a mixer if available.

Stir in 1 tbsp sugar if you prefer a lightly sweetened base.

Spoon batter evenly into the muffin cups, filling each about halfway as they will rise significantly. Bake for 30–35 minutes or until puffed and deeply golden brown.

Serve warm, optionally topping with honey, powdered sugar, or jam.
