Oven Baked Chicken and Rice (Print Version)

# Ingredients:

01 - 5 bone-in chicken thigh fillets, skin off.
02 - 1 onion, chopped.
03 - 2 cloves garlic, minced.
04 - 2 tablespoons butter.
05 - 1 1/2 cups white rice.
06 - 1 1/2 cups chicken stock.
07 - 1 1/4 cups water.
08 - 1 teaspoon paprika.
09 - 1 teaspoon dried thyme.
10 - 1/2 teaspoon garlic powder.
11 - 1/2 teaspoon onion powder.
12 - 3/4 teaspoon salt.
13 - Black pepper to taste.
14 - Oil spray.
15 - Fresh parsley for garnish.

# Instructions:

01 - Heat oven to 350°F. Place onions and butter in 9x13 dish. Bake 15 minutes until browned.
02 - Mix spices for rub. Coat chicken thighs evenly with spice mixture.
03 - Add rice to browned onions. Pour in stock, water, and garlic. Mix well.
04 - Place chicken on rice. Cover with foil and bake 30 minutes.
05 - Uncover, spray chicken with oil. Bake 20 more minutes until chicken is done and rice is tender.

# Notes:

01 - Any long grain rice works well.
02 - Can use boneless thighs but adjust cooking time.
