Set your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

Remove any wilted or damaged outer leaves from the cabbage. Slice the cabbage into ¾-inch thick rounds or 'steaks' using a sharp knife. Keep the core intact to hold the steaks together.

In a small bowl, mix olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper. Brush the mixture generously onto both sides of each cabbage steak.

Place the cabbage steaks on the prepared baking sheet in a single layer. Roast in the oven for 25–30 minutes, flipping halfway through. Remove when the edges are golden brown and crispy.

Let the cabbage steaks cool for a couple of minutes. Sprinkle with optional toppings like Parmesan, red pepper flakes, or fresh parsley before serving.

Preheat your air fryer to 375°F (190°C) for 3–5 minutes. Follow the same steps to slice and season the cabbage. Cook in batches if needed, placing the steaks in a single layer in the air fryer basket. Air fry for 10–15 minutes, flipping halfway through, until crisp and golden.
