Pastry Wrapped Apple Brie (Print Version)

01 - 2 Honeycrisp apples, sliced
02 - 1 sheet frozen puff pastry, thawed
03 - 1 wheel brie cheese
04 - 2 tablespoons apple butter or fig preserves

→ Coating & Glazing

05 - 3 tablespoons salted butter
06 - 3 tablespoons maple syrup
07 - 1 egg, beaten
08 - Coarse sugar, for sprinkling

→ Garnish

09 - Fresh thyme sprigs

# Instructions:

01 - Preheat the oven to 220°C (425°F).
02 - Combine the sliced apples, butter, and maple syrup in a baking dish. Transfer to the oven and roast for 25 minutes, until soft and caramelized.
03 - Layer the puff pastry flat on a parchment-lined baking sheet. Place the brie in the center of the pastry and remove a little of the rind from the top of the brie, leaving the rind on the bottom and sides intact. Spread the apple butter or fig preserves over the top.
04 - Fold the corners of the pastry over the brie. Brush the pastry with beaten egg and sprinkle lightly with coarse sugar.
05 - Bake for 20-25 minutes or until the pastry is deep golden brown.
06 - Spoon the roasted apples over the baked brie. Top with fresh thyme. Serve with crackers or enjoy on its own.
