Pesto Grilled Cheese Sandwich (Print Version)

# Ingredients:

01 - 4 slices sourdough bread
02 - 2 tablespoons basil pesto
03 - 4 ounces fresh mozzarella cheese, sliced
04 - 2 vine-ripe tomatoes, thinly sliced
05 - 2 tablespoons butter, softened
06 - 4 slices bacon (optional)

# Instructions:

01 - Cook bacon in cold skillet over medium heat until crispy. Remove to paper towel-lined plate, leaving grease in pan.
02 - Spread pesto on each bread slice. Layer mozzarella, tomatoes, and bacon on two slices, top with remaining bread, pesto side down.
03 - Heat skillet over medium heat. Butter tops of sandwiches and place butter-side down. Cook 3-4 minutes until golden.
04 - Butter uncooked sides, flip, and cook 2-3 minutes until toasted and cheese melts. Rest 1-2 minutes before cutting.
