Pineapple Chicken Rice (Print Version)

# Ingredients:

01 - 1 pound chicken breast, cubed
02 - 1 cup pineapple, cubed
03 - 1 tablespoon olive oil
04 - 1 onion, chopped
05 - 2 cloves garlic, minced
06 - 1 red bell pepper, diced
07 - 1 cup jasmine rice
08 - 2 cups chicken broth
09 - 1 tablespoon soy sauce
10 - 1 teaspoon ginger, grated
11 - Salt and pepper to taste

12 - ¼ cup green onions, sliced
13 - 1 tablespoon sesame seeds

# Instructions:

01 - Heat olive oil in large skillet over medium heat. Cook cubed chicken until golden brown. Remove and set aside.
02 - In same skillet, sauté onion, garlic, and red bell pepper until softened.
03 - Add pineapple cubes to skillet and cook for 2 minutes.
04 - Stir in rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to boil, reduce heat, cover, and simmer 18-20 minutes until rice is cooked.
05 - Return cooked chicken to skillet and mix well to distribute flavors evenly. Heat through.
06 - Garnish with sliced green onions and sesame seeds before serving.

# Notes:

01 - Can use fresh or canned pineapple
02 - Adjust soy sauce for desired saltiness
