Prawn Cocktail (Print Version)

# Ingredients:

→ Prawns

01 - 1 kg medium prawns with shell (yields 600g peeled)
02 - OR 600g peeled cooked prawns
03 - 3 cups finely sliced iceberg lettuce
04 - Lemon wedges
05 - Finely chopped parsley (optional)

→ Sauce

06 - 2/3 cup whole egg mayonnaise
07 - 1 tbsp ketchup
08 - 1 tsp Worcestershire sauce
09 - 1 tsp freshly grated horseradish
10 - Dash of tabasco sauce
11 - Pinch of cayenne pepper

# Instructions:

01 - Peel prawns if using whole ones, keeping a few unpeeled for looks if you like.
02 - Mix mayonnaise, ketchup, Worcestershire, horseradish, tabasco, and cayenne in a small bowl.
03 - Toss peeled prawns with the sauce until well coated.
04 - Put some lettuce in serving dishes—like martini glasses or cups. Pile prawns on top.
05 - Add lemon wedges and a sprinkle of parsley if using, then serve right away.

02 - Whole egg mayo is smoother—find it at supermarkets.
03 - Make sauce up to 3 days ahead, assemble just before serving.
