In a saucepan, gently warm prawn-infused gin with prawns for about 5 minutes. Cool and strain the infused gin.

Add infused gin, fresh lemon juice, simple syrup, and egg white (if using) to a cocktail shaker. Shake without ice for 10 seconds to create foam.

Add ice cubes to the shaker and shake again until well chilled.

Double strain the mixture into a highball glass filled with fresh ice.

Slowly top with soda water over a bar spoon. Stir gently and garnish with a lemon twist or tiny prawn skewer.
