Princess Pancakes Recipe (Print Version)

# Ingredients:

→ Cream Cheese Icing

01 - 1/2 cup butter, softened
02 - 1/2 cup cream cheese, softened
03 - 1 teaspoon vanilla extract
04 - 2 cups powdered sugar
05 - 3 tablespoons milk

→ Pancakes

06 - 1 1/2 cups all-purpose flour
07 - 2 tablespoons sugar
08 - 2 teaspoons baking powder
09 - 1 teaspoon baking soda
10 - 1/4 teaspoon salt
11 - 1 large egg
12 - 1 cup milk
13 - 2 tablespoons vegetable oil (or melted butter)
14 - 2-3 drops pink gel food coloring
15 - Sprinkles

# Instructions:

01 - Beat butter and cream cheese until smooth. Add vanilla and powdered sugar. Stir in milk to desired consistency.
02 - In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
03 - Make a well in dry ingredients, add egg, milk, oil, and food coloring. Mix until just combined. Fold in sprinkles if desired.
04 - On medium-high heat, cook 1/4 cup portions of batter until bubbles form (about 2 minutes). Flip and cook 1-2 minutes more until golden.

# Notes:

01 - Can add strawberry extract or puree for extra flavor
02 - Adjust icing consistency with milk or powdered sugar
03 - Don't overmix the batter for fluffy pancakes
