Pastelón Recipe (Print Version)

# Ingredients:

01 - 4 ripe plantains (3-3.25 lbs).
02 - 1/2 cup vegetable oil.
03 - 1 lb ground beef.
04 - 1 tsp adobo seasoning.
05 - 1.5 tsp sazón blend.
06 - 1 small white onion, minced.
07 - 1 green bell pepper, minced.
08 - 1 tbsp recaito or 2 tbsp cilantro.
09 - 6 stuffed green olives, sliced.
10 - 1 tsp capers.
11 - 1 tsp dried oregano.
12 - 1 cup tomato sauce.
13 - 2 cups shredded cheese, divided.
14 - 2 large eggs.
15 - 1/2 tsp baking soda.

# Instructions:

01 - Preheat oven to exactly 350°F and grease 9x13 or 10x10 casserole dish depending on desired thickness.
02 - Peel plantains carefully, then slice lengthwise and cut into very thin 1/4-inch slices.
03 - Heat oil to 300°F in large skillet and fry plantain slices until lightly browned, about 1.5 minutes per side.
04 - Drain plantains on paper towels, reserving 1 tablespoon oil in pan.
05 - Cook ground beef with adobo and sazón seasonings until browned, about 6 minutes.
06 - Remove meat and cook onions, peppers, and recaito in remaining fat until softened.
07 - Add olives, capers, and oregano, cooking 2 minutes more.
08 - Return beef to pan with tomato sauce and simmer briefly.
09 - Layer plantains in bottom of dish, followed by meat mixture and 1/2 cup cheese.
10 - Repeat layers once more, reserving 1 cup cheese.
11 - Add final plantain layer on top.
12 - Whisk eggs with baking soda until frothy and pour over top layer.
13 - Bake uncovered 25 minutes.
14 - Add remaining cheese and bake 5 minutes more until melted.
15 - Rest 15 minutes before serving for proper slicing.
