Preheat oven to exactly 350°F and grease 9x13 or 10x10 casserole dish depending on desired thickness.

Peel plantains carefully, then slice lengthwise and cut into very thin 1/4-inch slices.

Heat oil to 300°F in large skillet and fry plantain slices until lightly browned, about 1.5 minutes per side.

Drain plantains on paper towels, reserving 1 tablespoon oil in pan.

Cook ground beef with adobo and sazón seasonings until browned, about 6 minutes.

Remove meat and cook onions, peppers, and recaito in remaining fat until softened.

Add olives, capers, and oregano, cooking 2 minutes more.

Return beef to pan with tomato sauce and simmer briefly.

Layer plantains in bottom of dish, followed by meat mixture and 1/2 cup cheese.

Repeat layers once more, reserving 1 cup cheese.

Add final plantain layer on top.

Whisk eggs with baking soda until frothy and pour over top layer.

Bake uncovered 25 minutes.

Add remaining cheese and bake 5 minutes more until melted.
